It is generously topped with melted mozzarella cheese, flavorful beef pepperoni slices, and a sprinkle of aromatic Italian herbs, offering a delightful combination of textures and classic pizza flavors in a convenient individual serving.

Ingredients

Scale
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 large egg
  • 1/4 cup shredded mozzarella cheese (for the base)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella cheese (for topping)
  • 1012 slices beef pepperoni
  • 1/2 teaspoon dried Italian seasoning or oregano

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 4-inch ramekin or a large cavity of a muffin tin.
  2. In a medium bowl, combine the cottage cheese, egg, 1/4 cup shredded mozzarella, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
  3. Spoon the cottage cheese mixture into the prepared ramekin or muffin tin, gently pressing it down to form an even base.
  4. Bake for 15-20 minutes, or until the edges are lightly golden and the base appears set.
  5. Remove the ramekin from the oven. Spread the pizza sauce evenly over the baked cottage cheese base.
  6. Top with the remaining 1/4 cup shredded mozzarella cheese and arrange the beef pepperoni slices on top.
  7. Return to the oven and bake for another 8-12 minutes, or until the cheese is melted and bubbly, and the pepperoni is slightly crisped.
  8. Carefully remove from the oven. Sprinkle with dried Italian seasoning or oregano before serving.
