This dish features whole or halved mushrooms, deeply browned and tender, coated in a rich, savory, and slightly sweet glaze. The mushrooms are infused with aromatic flavors, offering an earthy depth complemented by a hint of smokiness. Freshly chopped parsley provides a vibrant contrast and a fresh herbaceous finish to the robust sauce.

  • 1.5 pounds cremini mushrooms, cleaned and trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon brown sugar, packed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the cleaned mushrooms and cook, stirring occasionally, until they are well browned and have released most of their moisture, about 8-10 minutes.
  2. Add the minced garlic to the skillet and cook for another minute until fragrant, being careful not to burn it.
  3. In a small bowl, whisk together the vegetable broth, soy sauce, brown sugar, smoked paprika, and black pepper. Pour this mixture over the mushrooms in the skillet.
  4. Bring the sauce to a simmer, then reduce the heat to medium-low. Let the mushrooms cook in the sauce, stirring occasionally, for 10-15 minutes, or until the sauce has thickened and coats the mushrooms beautifully.
  5. Remove the skillet from the heat. Stir in the fresh chopped parsley just before serving.

Notes

* To clean mushrooms, gently wipe them with a damp cloth or a mushroom brush. Avoid rinsing them under water, as they can absorb too much moisture.

* For an extra layer of flavor, consider adding a pinch of dried thyme or a teaspoon of onion powder along with the smoked paprika.

* These mushrooms are excellent as a side dish, served over polenta, mashed potatoes, or alongside grilled plant-based proteins.
