  • 1/4 cup almond flour, plus 2 tablespoons for dusting
  • 1 large egg, beaten (for binding the meat)

  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil or cooking spray

Instructions

  1. **Prepare Eggs:** Gently place eggs in a pot of boiling water and cook for 6-7 minutes for a jammy yolk. Immediately transfer them to an ice bath to stop the cooking process. Once cooled, carefully peel the eggs.
  2. **Prepare Meat Mixture:** In a large bowl, combine the ground beef, 1/4 cup almond flour, the beaten egg, dried sage, dried thyme, garlic powder, onion powder, salt, and black pepper. Mix gently until all ingredients are just combined, being careful not to overmix.
  3. **Form Scotch Eggs:** Divide the meat mixture into 6 equal portions. Flatten one portion into a thin, even patty in the palm of your hand. Place a peeled egg in the center of the patty. Carefully mold the meat mixture around the egg, ensuring it is completely sealed and smooth, with no cracks. Repeat with the remaining eggs and meat.
  4. **Coat and Cook (Air Fryer Method):** Lightly dust each formed Scotch egg with the remaining 2 tablespoons of almond flour. Preheat your air fryer to 375F (190C). Lightly spray the Scotch eggs with olive oil or cooking spray. Place them in the air fryer basket in a single layer, ensuring they do not touch. Cook for 15-20 minutes, flipping them halfway through, until they are golden brown and the meat is cooked through (internal temperature 160F/71C).
  5. **Coat and Cook (Oven Method):** Lightly dust each formed Scotch egg with the remaining 2 tablespoons of almond flour. Preheat your oven to 400F (200C). Line a baking sheet with parchment paper. Lightly spray the Scotch eggs with olive oil or cooking spray and place them on the prepared baking sheet. Bake for 20-25 minutes, turning them halfway through, until golden brown and the meat is cooked through (internal temperature 160F/71C).
  6. **Serve:** Allow the Scotch eggs to rest for a few minutes before slicing in half and serving warm or at room temperature.

For a perfectly jammy yolk, ensure eggs are boiled for exactly 6 minutes before plunging into an ice bath.

To prevent the meat from cracking during cooking, ensure the meat mixture completely seals the egg.
