Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. In a separate medium bowl, whisk together the milk, egg, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. A few lumps are acceptable; do not overmix. The batter should be thick enough to drizzle but still pourable.
  4. Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350-375°F (175-190°C). Use a deep-fry thermometer to monitor the temperature.
  5. Carefully drop small spoonfuls (about 1-2 tablespoons) of batter into the hot oil. Do not overcrowd the pot; fry in batches to maintain oil temperature.
  6. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  7. Using a slotted spoon or spider, remove the funnel cake bites from the oil and place them on a wire rack set over a baking sheet lined with paper towels to drain excess oil.
  8. While still warm, generously dust the funnel cake bites with powdered sugar using a fine-mesh sieve.
  9. Serve immediately.

Notes

Maintain the oil temperature between 350-375°F (175-190°C) for best results; too low and the bites will be greasy, too high and they will burn quickly.
