This Cherry Fluff Salad is a light and airy dessert or side dish, characterized by its vibrant pink hue and creamy, sweet profile. It combines the bright, fruity taste of cherries and pineapple with the soft texture of whipped topping and mini marshmallows. A sprinkle of shredded coconut and whole maraschino cherries adds a delicate finish, creating a delightful balance of flavors and textures in every spoonful.

Ingredients

Scale
  • 1 (20 ounce) can crushed pineapple, well drained
  • 1 (21 ounce) can cherry pie filling
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 2 cups mini marshmallows
  • 1/2 cup shredded sweetened coconut, plus extra for garnish
  • 1/4 cup maraschino cherries, drained and halved, plus whole cherries for garnish

Instructions

  1. In a large mixing bowl, combine the well-drained crushed pineapple and the cherry pie filling. Stir gently to incorporate.
  2. Fold in the thawed whipped topping until no streaks remain and the mixture is uniformly pink and fluffy.
  3. Add the mini marshmallows and 1/2 cup shredded sweetened coconut to the bowl. Gently fold them into the cherry mixture until evenly distributed.
  4. Stir in the halved maraschino cherries.
  5. Transfer the fluff salad to a serving bowl. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the salad to set.
  6. Before serving, garnish with additional shredded coconut and whole maraschino cherries as desired.

Notes

Ensure the crushed pineapple is very well drained to prevent the salad from becoming watery. Press out excess liquid.

For a richer flavor, allow the salad to chill overnight.

Adjust the amount of marshmallows and coconut to your preference.

This salad is best served chilled and consumed within 2-3 days.
