These Egg and Cheese Toasts offer a delightful combination of textures and savory flavors. Thick slices of bread are topped with a creamy, seasoned egg mixture and a generous layer of melted, golden-brown cheese. The toast provides a firm base, while the topping is rich and satisfying, often finished with a hint of fresh herbs. This dish is typically baked or broiled, resulting in a warm, comforting meal or snack.

Ingredients

Scale
  • 4 slices thick-cut bread (such as sourdough or brioche)
  • 2 large eggs
  • 2 tablespoons milk or cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) or set your air fryer to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease an air fryer basket.
  2. In a medium bowl, whisk together the eggs, milk or cream, salt, and black pepper until well combined.
  3. Lightly brush one side of each bread slice with melted butter. Place the bread slices butter-side down on the prepared baking sheet or in the air fryer basket.
  4. Evenly spoon the egg mixture over the unbuttered side of each bread slice, spreading it gently to the edges.
  5. Sprinkle the shredded cheddar and mozzarella cheeses over the egg mixture on each toast.
  6. Bake in the preheated oven for 10-15 minutes, or air fry for 6-10 minutes, until the cheese is melted and bubbly and the edges of the toast are golden brown. If desired, broil for the last 1-2 minutes for extra browning on the cheese, watching carefully to prevent burning.
  7. Remove from the oven or air fryer. Garnish with fresh thyme sprigs, if using, before serving warm.

Notes

For a richer flavor, use a blend of cheeses like Gruyere or Monterey Jack.

Ensure your bread is thick enough to hold the topping without becoming soggy.

Do not over-whisk the eggs; just combine them until smooth.

These toasts are best served immediately while the cheese is still warm and gooey.

Consider adding a pinch of garlic powder or onion powder to the egg mixture for an extra savory note.
