This vibrant salad combines the natural sweetness of tender corn kernels with the crisp freshness of diced cucumber and halved cherry tomatoes. Each component is gently coated in a creamy, tangy dressing, creating a harmonious blend of flavors and textures. A light seasoning of herbs and spices enhances the overall profile, making it a refreshing and satisfying side dish perfect for any meal.

Ingredients

Scale
  • 2 cups cooked corn kernels (from 23 ears or 15 oz can, drained)
  • 1 large cucumber, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise (or plain Greek yogurt for a lighter option)
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon white vinegar or fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Pinch of red pepper flakes (optional, for garnish)

Instructions

  1. If using fresh corn, cook and cool the kernels before removing them from the cob. If using canned corn, drain thoroughly.
  2. In a large mixing bowl, combine the cooked corn kernels, diced cucumber, and halved cherry tomatoes.
  3. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), fresh dill, white vinegar (or lemon juice), garlic powder, black pepper, and salt until the dressing is smooth and well combined.
  4. Pour the prepared dressing over the corn and vegetable mixture. Gently toss until all ingredients are evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
  6. Before serving, give the salad another gentle stir. Garnish with an additional sprinkle of black pepper or red pepper flakes if desired.

Notes

For the best flavor, allow the salad to chill for at least one hour before serving.

Freshly cooked corn on the cob can be used for a sweeter, more vibrant flavor profile.

Consider adding a touch of finely minced red onion for an extra layer of flavor and a subtle crunch.

This salad can be prepared a few hours in advance, but it is best enjoyed the same day for optimal freshness.
