These delightful air-fried jelly donuts offer a lighter take on a classic treat. Each donut features a tender, fluffy dough with a golden exterior, lightly coated in granulated sugar. They are generously filled with a vibrant, sweet fruit jelly, providing a burst of flavor with every bite. The air frying method yields a wonderfully soft texture without deep-frying.

Ingredients

  • * **For the Dough:**
  • * 1 cup (240ml) warm milk (105-115°F / 40-46°C)
  • * 2 ¼ teaspoons (1 packet) active dry yeast
  • * ¼ cup (50g) granulated sugar, plus 1 teaspoon
  • * 1 large egg, at room temperature
  • * ¼ cup (56g) unsalted butter, melted and cooled
  • * 1 teaspoon vanilla extract
  • * ½ teaspoon salt
  • * 3 cups (360g) all-purpose flour, plus more for dusting
  • * **For the Filling and Coating:**
  • * ½ cup (160g) raspberry or strawberry jam/jelly
  • * ¼ cup (56g) unsalted butter, melted
  • * ½ cup (100g) granulated sugar

Instructions

  1. In a large bowl, combine the warm milk, 1 teaspoon of sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add the remaining ¼ cup sugar, egg, melted butter, vanilla extract, and salt to the yeast mixture. Whisk until well combined.
  3. Gradually add the flour, one cup at a time, mixing until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 4-5 minutes.
  5. Place the dough in a lightly oiled bowl, turning once to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Gently punch down the risen dough. Roll it out on a lightly floured surface to about ½-inch thickness. Using a 2.5-3 inch round cookie cutter, cut out donuts. Reroll scraps and cut more donuts.
  7. Place the cut donuts on parchment-lined baking sheets, leaving space between each. Cover loosely and let rise for another 30-45 minutes, or until visibly puffy.
  8. Preheat your air fryer to 350°F (175°C). Lightly spray the air fryer basket with non-stick spray.
  9. Working in batches, carefully place 2-3 donuts in the air fryer basket, ensuring they do not touch. Air fry for 4-6 minutes, flipping halfway through, until golden brown and cooked through. Adjust time as needed for your specific air fryer.
