Ingredients

Scale
  • 1 box (15.25 oz) yellow cake mix, plus ingredients called for on box (eggs, oil, water)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 (12 oz) container frozen whipped topping, thawed
  • 1 (20 oz) can pineapple chunks, well-drained
  • 1/2 cup shredded coconut, toasted
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the yellow cake mix according to package directions. Pour batter into the prepared pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan on a wire rack.
  3. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
  4. Gently fold in the thawed whipped topping until no streaks remain.
  5. Spread half of the cream cheese mixture evenly over the cooled cake.
  6. Arrange the well-drained pineapple chunks over the cream cheese layer.
  7. Spread the remaining cream cheese mixture over the pineapple.
  8. Sprinkle the toasted shredded coconut and chopped pecans evenly over the top.
  9. Cover the cake and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the cake to set.
  10. Cut into squares and serve chilled.

Notes

Ensure the pineapple chunks are thoroughly drained to prevent the cake from becoming soggy.

For best results, allow the cream cheese to come to room temperature before mixing to achieve a smooth consistency.

Toasting the shredded coconut enhances its flavor and adds a pleasant crunch.

Chilling the cake for several hours is crucial for the layers to set properly and for optimal flavor development.
