These delightful breakfast pancake poppers present a classic sweet flavor with a wonderfully fluffy interior and a perfectly golden, lightly crisp exterior. Cooked on a griddle or pan, their bite-sized form makes them an enjoyable and convenient addition to any morning meal.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (or neutral oil)
  • 1 teaspoon vanilla extract
  • Butter or neutral oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. A few lumps are acceptable; avoid overmixing.
  4. Heat a large non-stick skillet or griddle over medium-low heat. Lightly grease the surface with butter or neutral oil.
  5. Using a small spoon, a piping bag, or a squeeze bottle, drop about 1 tablespoon of batter per popper onto the hot surface, ensuring there is space between each.
  6. Cook for 2-3 minutes per side, or until the poppers are golden brown and cooked through. The edges should appear set, and small bubbles will form on the surface before flipping.
  7. Remove the cooked poppers from the skillet and transfer them to a plate. Repeat with the remaining batter, greasing the pan as needed.
  8. Serve warm with your preferred toppings.

Notes

Do not overmix the batter; overmixing can result in tough pancakes.

Adjust the heat as necessary to prevent burning and ensure even cooking.

For uniform, perfectly round poppers, consider using a squeeze bottle or a small cookie scoop.

These poppers are excellent served with maple syrup, fresh berries, or a dusting of powdered sugar.

Leftover pancake poppers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
