  1. **Prepare the Au Jus:** In a medium saucepan, combine beef broth, onion powder, garlic powder, dried thyme, black pepper, and Worcestershire sauce. Bring to a simmer over medium heat, then reduce heat to low and keep warm while preparing the roll-ups.
  2. **Assemble the Roll Ups:** Lay a tortilla flat. Place a slice of provolone cheese (or a sprinkle of shredded Swiss) in the center, followed by about 1/4 cup of shredded beef. Roll the tortilla tightly, tucking in the sides as you go, to form a compact roll. Repeat with the remaining tortillas, cheese, and beef.
  3. **Cook the Roll Ups:** Heat a large non-stick skillet over medium heat. Brush the outside of each roll-up with melted butter or olive oil. Place the roll-ups seam-side down in the skillet. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and bubbly. Alternatively, you can bake them: preheat oven to 375°F (190°C). Arrange buttered roll-ups on a baking sheet and bake for 10-15 minutes, or until golden and cheese is melted.
