Baked until bubbly, the dish offers a harmonious blend of creamy textures and satisfying flavors, with the cheese forming a delightful, browned crust.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream
  • 1.5 cups shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss the chicken cubes with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
  3. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until lightly browned on all sides and mostly cooked through. Remove chicken from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.
  5. Gradually whisk in the chicken broth until smooth, then stir in the heavy cream. Bring the sauce to a gentle simmer, stirring frequently, until it thickens slightly, about 3-5 minutes. Season the sauce with salt and pepper to taste.
  6. Stir the cooked chicken into the cream sauce.
  7. Pour the chicken and sauce mixture into the prepared baking dish. Sprinkle evenly with 1 cup of the shredded mozzarella cheese and the optional Parmesan cheese.
  8. Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and golden brown.
  9. Remove from oven and let stand for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

For a richer flavor, use boneless, skinless chicken thighs instead of breasts.

Ensure chicken is cut into uniform pieces for even cooking.

Add a pinch of red pepper flakes to the sauce for a subtle kick.

Serve this bake with a side of steamed green beans or a fresh salad.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
