Golden-brown florets of cauliflower, roasted to perfection, offer a delightful contrast of tender interiors and crisp, caramelized edges. Seasoned simply with olive oil, salt, and pepper, this dish highlights the natural sweetness of the vegetable, making it a versatile and flavorful side that complements a wide range of meals.

Ingredients

Scale
  • 1 large head cauliflower, about 2 pounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Wash and thoroughly dry the cauliflower. Remove the outer leaves and core, then cut the head into bite-sized florets. Aim for pieces of similar size to ensure even cooking.
  3. In a large bowl, combine the cauliflower florets with olive oil, sea salt, black pepper, and garlic powder (if using). Toss well until all the florets are evenly coated.
  4. Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan, as this can steam the cauliflower instead of roasting it, preventing crispiness. Use two baking sheets if necessary.
  5. Roast for 20-25 minutes, flipping the florets halfway through, until they are tender-crisp and have developed golden-brown, caramelized edges.
  6. Remove from the oven and transfer to a serving dish. Garnish with fresh chopped parsley before serving warm.

Notes

For extra crispiness, ensure the cauliflower is completely dry before tossing with oil and seasonings.

Do not overcrowd the baking sheet; give the florets space to roast properly.

Experiment with other seasonings like smoked paprika, curry powder, or a pinch of red pepper flakes for a different flavor profile.

Leftover roasted cauliflower can be stored in an airtight container in the refrigerator for up to 3-4 days.
