  • 1 pound store-bought pizza dough
  • 1 tablespoon olive oil
  • 1 pound ground turkey sausage
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven while preheating.
  2. On a lightly floured surface, roll or stretch the pizza dough into a 12-14 inch circle. Carefully transfer the dough to a pizza pan or a piece of parchment paper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the ground turkey sausage and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat and set the sausage aside.
  4. In the same skillet (or a clean one), melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  5. Gradually whisk in the milk, a little at a time, ensuring no lumps form. Continue to whisk until the gravy thickens to your desired consistency, about 5-7 minutes. Season with salt and pepper.
  6. Spread the prepared gravy evenly over the pizza dough, leaving a small border for the crust.
  7. Sprinkle the cooked turkey sausage over the gravy, then top with the mozzarella and cheddar cheeses.
  8. Bake for 12-18 minutes, or until the crust is golden brown and the cheese is melted and bubbly. If desired, broil for the last 1-2 minutes for extra browning on the cheese.
  9. Remove from the oven, let cool for a few minutes, then garnish with fresh chopped parsley before slicing and serving.

For a crispier crust, preheat a pizza stone or baking steel in the oven.
